Summer Squash Fritters


  • 1 large summer squash, grated
  • 1/2 cup tapioca flour
  • 1 egg OR 3 tbs soaked flax seeds
  • 1/2 cup nutritional yeast
  • 1 tsp mustard powder
  • 1 tsp paprika
  • 2 tsp black pepper
  • 2 tsp salt
  • Oil for frying
  1. Place grated squash in a cheesecloth and squeeze until no more water runs out. You should have about 3/4 of a cup of squash left.
  2. Pour oil (about 1-2 tbs) into a pan and bring to medium heat.
  3. While oil is heating, combine all remaining ingredients in a large bowl and mix well.
  4. Scoop out about 1/4 cup of squash mixture, and drop into the pan. Flatten it gently with a spatula if needed.
  5. Cook 3-4 minutes, than flip with a spatula, and cook an additional 3-4 minutes.
  6. Remove from the heat when the fritter is golden brown and a toothpick inserted into the center comes out clean.
  7. Repeat until you have used up your squash mixture.
  8. Serve hot.
