Vegan Cherry Pie


  • 2 lbs cherries, pitted and halved
  • 1 9″ vegan pie crust (your favorite recipe or premade crust)
  • 1/4 cup cranberry juice
  • 2 tbs cornstarch
  • 3 tbs sugar
  1. Prepare your pie crust according to your recipe or package directions.
  2. Preheat the oven to 375F/190C
  3. Put the cornstarch in a small cup. Add 1-2 tbs of cranberry juice at a time, stirring quickly, until you have a smooth paste.
  4. Add the rest of the cranberry juice and stir well.
  5. Place the cherries in a shallow saucepan.
  6. Add sugar, and pour in cranberry juice mixture.
  7. Simmer on medium heat until the cherries are soft and the cranberry juice mixture has changed from chalky pink to clear red.
  8. Pour the cherries into your pie crust. (If you have different varieties of cherries, you can arrange them by color like we did in our pie!)
  9. Bake for 25 minutes.
  10. Serve hot with your favorite nice cream.
