- 4 cups butter lettuce, shredded
- 8 radishes, sliced
- 2 roasted beeta, sliced
- 1/4 cup roasted pumpkin seeds
- 1/4 cup blood orange juice
- 3 tbs balsamic vinegar
- 3 tbs olive oil
- 1/2 tsp black pepper
- 1/2 tsp salt
- In a small bowl, combine dressing ingredients.
- Whisk together with a fork and set in the fridge to chill.
- Add salad ingredients to a large bowl.
- Drizzle with dressing.
- Toss to coat.
