Pina Chipotle Roasted Vegetables

Remember that wonderful box of ‘ugly’ fruit and veggies from the folks at Imperfect Product? Here’s what we did with it!


  • 1/2 cup pineapple chunks
  • 3 tbs pineapple juice
  • 3 chipotle peppers (with 3 tbs adobo sauce)
  • 2 tsp salt
  • 1 clove garlic
  • 2 tbs canola oil
  • 3 yellow potatoes, chopped
  • 2 ears corn
  • 1 head broccoli, chopped
  • 2 yellow onions, sliced
  • 3 carrots, chopped
  • 1 bell pepper, sliced
  1. Preheat oven to 375F/190C.
  2. Add oil, garlic, chipotle peppers, adobo sauce, pineapple juice and pineapple chunks to a blender.
  3. Blend on high until smooth.
  4. Place vegetables in a large roasting pan.
  5. Pour the pineapple sauce over the vegetables and stir to coat.
  6. Place in the oven and cook for 45 minutes.
