Honey Balsamic Roasted Veggies


  • 1 parsnip, peeled and cut into sticks
  • 2 carrots, peeled and cut into matchsticks
  • 1 large yellow onion, sliced
  • 2 sweet potatoes, sliced into sticks
  • 4 tbs balsamic vinegar
  • 2 tbs honey
  • 2 tsp salt
  • 1 tsp black pepper
  • 3 tbs olive oil
  1. Preheat oven to 400F.
  2. In a small cup, microwave the honey for 1 minute or until it is a thin liquid. Whisk in the salt, vinegar and black  pepper, and set aside.
  3. Combine sweet potatoes, parsnip, and carrots in a large microwave-safe bowl. Microwave for 2-3 4-minute bursts, stirring in between, until vegetables are tender.
  4. Mix in sliced onions.
  5. Pour balsamic mixture over the vegetables and stir to coat evenly. Let sit for 3-4 minutes.
  6. Pour olive oil over vegetables, and stir to coat.
  7. Spread vegetables out on a baking sheet. Bake for 20 minutes, or until onions begin to caramelize.
