Veggie Fried Rice

Ingredients:

  • 3 cups cooked brown rice
  • 1 small zucchini, grated
  • 1 large carrot, grated
  • 2 cloves garlic, minced
  • 2 tbs oil
  • 3 tbs soy sauce
  • 1 tsp white pepper

Directions:

In a frying pan, heat oil, soy sauce and garlic until liquid is bubbling. Add rice, zucchini, and carrot. Add white pepper. Fry, stirring constantly, until rice and vegetables begin to crisp.

Serve hot.

Serves 2-3
